Dilsk

Fine dining without Etch's price tag

Local score

No. 100 of 300 places to eat on r/brighton, from 17 locals across 19 threads.

100% would send a mate. Still recommended in 2026.

Regularly named alongside Etch and Furna as one of Brighton's top high-end spots, offering a 4-course set (£40), short tasting (£60) and full tasting (£95) menu. Redditors rate the food highly (cod dish 'brilliant', Jerusalem artichoke snack a favourite) and see it as better value than Etch, though the wine pairing wasn't felt to be worth it next to sharing a bottle.

What locals say

As others have mentioned Flint house is quite similar to Burnt Orange, with small plate and a similar price. But I'm surprised no one has mentioned these. Most similar to Burnt Orange is Embers, and the most similar to Etch is Furna. Dilsk is also similar on the fine dining end. Bincho is similar to Bonsai, but does meat and veggie. If you like interesting cocktails, Golden Pineapple is good. It's more of a bar, but their gonna be doing dumplings from their kitchen soon.

I've been to Etch and Dilsk. Both are fantastic. Etch is a bit of a step up in terms of experience and surroundings, and probably just edges it on the food side too but I think it's quite a bit pricier. How Etch doesn't have a Michelin Star yet I do not know. Another similar tasting-menu option is The Set. I haven't been but I've heard…

…as the other restaurants grouped into the Brighton elite category (e.g. Burnt Orange - which incidentally like Terre a Terre I don’t think is THAT great, although it has the edge on T a T when it comes to cocktails and ambience) Best tasting menus I had were Kindling and Dilsk - if you want something in the Burnt Orange ballpark, recommend those. Tinto Taperia is nice for tapas. Pho is a £mid range chain but I think it’s a great casual shout for Vietnamese food sitting in. Fika for good toasted sandwiches. In the summer definitely worth drifting to the Sea Lanes one and pairing it…

I actually quite liked Dilsk, we got the added snacks as well but didn't pay for the wine pairing as it didn't seem like great value compared to sharing a nice bottle for £15 each. The snacks were fun, loved the Jerusalem artichoke one. I thought the cod dish was brilliant, the squid was nice but wasn't the biggest fan of the veg pasta…
