Cookery classes

Learn dim sum, Goan or Korean cooking at the Community Kitchen this autumn

Classes at the Food Partnership's Community Kitchen cost £69.99 to £79.99, and any profits support its community cookery activities.

The Brighton & Hove Food Partnership’s Community Kitchen on Queens Road still has spaces on several chef-led cookery classes this autumn. Any profits from the classes support the partnership’s community cookery activities.

The Kitchen has hosted more than 1,000 community sessions for people in need, among them people living with dementia, refugees and carers. The partnership says it relies on ticket sales to continue its operations, “including our free community classes for people in need”.

At most classes you cook in pairs. Tickets for most classes include tuition, all ingredients and a full meal to eat in the dining area at the end, or boxed up to take home.

Six classes with spaces

Chef Jethro’s dim sum class is on Wednesday 21 October, from 6pm to 9pm. Everyone learns to make siu mai and to fold dumplings, cooked in a steamer basket over a wok. Tickets for the dim sum class are £69.99.

Chef Kanthi’s Goan cookery class is on Monday 2 November, from 6pm to 9pm. The menu includes chicken cafreal masala, sukhi potato bhaji, Goan cabbage salad and coconut pulao rice. Tickets for the Goa class with Kanthi Thamma, who set up the local restaurants Curry Leaf Cafe and Easy Tiger, are £75.

Diego Ricaurte teaches seasonal street food on Tuesday 3 November, from 6pm to 9pm. The menu is set by what’s available locally on the day, with meat from Sussex Grazed and vegetables from Barcombe Nurseries. Diego opened the Michelin Guide restaurant Palmito, and tickets for his class are £75.

Chef Jethro’s Korean class is on Friday 13 November, from 6pm to 9pm. You make Yachae Mandu (vegetable dumplings), Tteokbokki (spicy rice cakes) and Kimchijeon (kimchi pancakes). Tickets for the Korean class with Jethro Carr, a Cookery Leader at the Community Kitchen, are £69.99.

Lerato Umah-Shaylor, author of the Africana cookbook, runs an Ethiopian and Eritrean masterclass on Saturday 14 November, from 11am to 2pm. You make a berbere spice blend, doro wot stew, quick injera and braised greens. Tickets for the masterclass with Lerato, a TV chef and Radio 4 Kitchen Cabinet panel member, are £75.

Emma Hatcher teaches gluten-free baking and pastry on Sunday 15 November, from 1pm to 5pm. You go home with a Victoria sponge, cheddar scones and mini galettes. Tickets for the class with Emma Hatcher, a cook, author and recipe developer, are £79.99.

Booking

The dim sum, Goan, Korean and Ethiopian menus can be adapted for vegan diets if you say so when booking. A limited number of concession tickets are available for people on a means-tested benefit, full-time students, and carers or companions assisting someone with a disability.

The partnership says upcoming dates are very often sold out. When a class is full, you can join its waitlist on the class page.
